Luscious Watermelon Cake

I don’t know how the weather is where you are, but here in California it is hot and dry. This chilled watermelon cake is just what I needed to get a break from the heat and quench my thirst and delight my palate! That’s why I wanted to share it with you and hope it does the same for you too!
What you will mainly need for this recipe is one medium size watermelon, canned coconut milk – the full fat type, fresh fruit and sliced almonds to decorate.
This is such a great and healthy alternative to sugary, high calorie cakes. A wonderful and beautiful dessert addition to your summer barbeques. Serve chilled and Enjoy!
